Eventually you'll have a library of recipes for your favorite meals that you're familiar with, and you'll have the ingredients handy so you can cook quickly and easily anytime, anywhere. In this book, I provide a 30-day cooking plan to help you take the first step. Many of these meals can be directly swapped with other dishes. Make the sauce by blending the oil, basil, pine nuts, and garlic in a high-speed processor until smooth. 2. Use a spiral cutter to cut the zucchini. I like thin slices, so I use a 0.2 cm wide blade. 3. Mix the zucchini noodles with the pesto sauce, then add the sun-dried tomatoes and cashews. Finally, season with salt and pepper. Note: This dish can add healthy fats and oils. The ground cashews taste like Parmesan cheese, soft, tender and a little salty.
