Special Mid-Autumn Festival dinner for diabetics to enjoy delicious food

Due to the westernized diet and lack of physical exercise, the number of obese people in China is gradually increasing, which in turn leads to an increasing number of people suffering from diabetes. In order to control blood sugar stability, diabetics need to pay special attention to a balanced diet and reduce sugar intake in their daily diet. However, nutritionists remind us that the upcoming Mid-Autumn Festival is an important day for family reunion, and diabetics must not be overwhelmed by the joyous atmosphere and forget to control their diet.

In order to allow diabetic patients to enjoy a hearty and healthy diet during the Mid-Autumn Festival, nutritionist Zhan Yirui of Taichung Veterans General Hospital has designed a complete dinner plan for diabetic patients based on the recommended daily calorie intake of 1,800 calories for an adult weighing 60 kg.

1. Japanese style salad

  • Ingredients: 35g red pepper, 35g yellow pepper, 30g king oyster mushroom, 1 teaspoon low-fat Japanese sauce.

  • practice:

    1. Cut red pepper, yellow pepper and king oyster mushroom into strips.

    2. Add 1 teaspoon low-fat Japanese sauce and mix well.

  • Nutritional value: 29 calories, 1.2 grams of protein, 6 grams of carbohydrates.

2. Kelp sprout cold soup

  • Ingredients: 10 grams of kelp sprouts, 10 grams of cucumber, a little green onion, appropriate amount of white vinegar, and a little salt.

  • practice:

    1. Soak the kelp sprouts in water, wash and cut into small sections, cut the cucumber into shreds, and chop the green onions.

    2. Add water to kelp sprouts and bring to a boil, then turn off the heat. Add cucumber shreds and season with white vinegar and salt, and finally sprinkle with chopped green onions.

    3. Refrigerate.

  • Nutritional value: 8 calories, 0.3 grams of protein, 1.7 grams of carbohydrates.

3. Whole wheat tuna roll

  • Ingredients: 55g whole wheat crust, 25g alfalfa sprouts, 20g carrots, 20g cucumbers, 35g canned tuna.

  • practice:

    1. Cut carrots and cucumbers into strips, and wash and set aside with alfalfa sprouts.

    2. After the whole wheat crust is baked, put the ingredients 1 and tuna slices on it and roll it up.

  • Nutritional value: 173 calories, 10.5 grams of protein, 3.2 grams of fat, and 25.5 grams of carbohydrates.

4. Roasted Vegetables

  • Ingredients: 55 grams of pumpkin, 40 grams of broccoli, 40 grams of bamboo shoots, a little black pepper, a little salt, 1 teaspoon of olive oil.

  • practice:

    1. Chop pumpkin and bamboo shoots into pieces, and wash cauliflower and set aside.

    2. Prepare aluminum foil, put ingredients 1 in it, and season with black pepper, salt and olive oil. Bake in the oven or on a baking sheet.

  • Nutritional value: 102 calories, 2.8 grams of protein, 5 grams of fat, and 11.5 grams of carbohydrates.

5. Roasted Leg Steak

  • Ingredients: 60g boneless chicken legs, 60g potatoes, 20g mushrooms, 15g large tomatoes, 15g broccoli, 1 teaspoon olive oil, 1 teaspoon light salt soy sauce, 1/6 lemon.

  • practice:

    1. Marinate the boneless chicken thighs with light salt soy sauce and rice wine and set aside.

    2. Dice potatoes, remove stems of mushrooms, and slice tomatoes for later use.

    3. Bake the chicken thighs, potatoes, broccoli and mushrooms until cooked. When serving, drizzle the vegetables with olive oil and the chicken thighs with lemon juice.

  • Nutritional value: 208 calories, 14.4 grams of protein, 9 grams of fat, and 17.5 grams of carbohydrates.

6. Fruits & Snacks

  • Ingredients: 2 slices of pomelo, half a small mooncake.

  • Nutritional value: Grapefruit contains 60 calories and 15 grams of sugar; small mooncakes contain 94 calories, 1.8 grams of protein, 3.5 grams of fat and 13.8 grams of sugar.
