Ingredients (for 2 people)**

4 sardines, 2 pickled plums, 1/2 slice of ginger, 1 tablespoon soy sauce, 1 tablespoon mirin, 1 cup of water.

1. Remove the scales, cut off the fish head, take out the internal organs, and clean the fish body.

2. Cut the ginger into thin slices.

Material:

1 kg of dried sour plums, sugar (30-50% of the weight of the crushed plum flesh), 1-2 tablespoons of mirin.

1. Soak the dried sour plums in water for about six to eight hours.

2. After removing the plum pits, crush the plum flesh.

3. Put the plum meat into the pot and add the sugar in two batches.

4. Heat over low heat, stirring for about 20 minutes, until it becomes a jam-like consistency.

5. Add mirin to add gloss.
