The sauce for the cold noodles is usually composed of sesame paste and peanut powder. Sesame and peanuts are both fat-rich foods. One spoonful of sesame paste has about 124 calories. Add peanut powder, and there are nearly 1.5 spoonfuls of fat and nearly 200 calories, making the calories of the whole serving of cold noodles close to 600 calories, almost equivalent to a bento. From a nutritional perspective, cold noodles are mainly composed of starch, with very few vegetables, and the amount of fiber intake is obviously insufficient. Therefore, if you eat cold noodles as a main meal, you should have more boiled vegetables or add a tea egg to supplement your nutrition, or pay more attention to the amount of fiber, vegetables and fruits in the other two meals.

Japanese vs Taiwanese cold noodles

Cold noodles are divided into Taiwanese and Japanese styles. Taiwanese style is the commonly seen oil noodles with sesame paste, cucumber, etc., while Japanese style cold noodles are buckwheat noodles with kelp soy sauce or bonito soy sauce, mustard sauce, etc. Not only does the calorie content in the sauce is reduced a lot, buckwheat noodles contain a variety of essential amino acids for the body, and the vitamin P (rutin) in buckwheat has the effect of dilating and strengthening blood vessels, and also has the effect of preventing stroke and high blood pressure. In addition, buckwheat noodles contain more soluble fiber, which is suitable for promoting gastrointestinal motility and digestion.
